By the harbour in the small fishing town of Whitby in North Yorkshire, James visits a kipper-smoking establishment and then he makes jugged kippers, grilled kippers with haddock butter, kipper pate, poached kippers with poached egg and hollandaise sauce and a smoked haddock omelette.
