Heston Blumenthal: In Search of Perfection

Heston Blumenthal creates a perfect version of the 70s dessert trolley classic baked Alaska. His research begins at Delmonico's restaurant in New York, inventors of the dessert. Convinced that the dish's intrigue lies in its hot/cold contrast, he goes shopping for some roof insulation. Experiments take him as far as Bristol university and involve hot jam, white chocolate tubes and dry ice.
